In your candida diet eating plan, have you tried eating your starchy vegetables (potatoes, squash, corn, etc) and bread only at your last meal of the day? That way, if you become tired after eating, you are set up for bedtime when your energy naturally slows down anyways. This suggestion was given to me by a "medical intuitive" at a workshop I attended last time. She said this was what she did because she had also had candida and allergies that she had dealt with and still watched what she ate and when.
Eating starches only at your last meal is exactly what the Carbohydrate Addict's Diet is like. I get great sleep with carbs as my last meal. That was not a last snack, by the way. No one should be eating too close to bedtime. It takes about four hours to digest a meal. If you eat a carb meal at 6:00 pm and go to bed at 10:00 pm, you will be able to follow the four hour rule you were told.
Feeling weary after a meal as well as dozing off is a classic sign of a bad digestive system. It may mean you are eating too large a meal at one goes. I have also been told by another person that our first meal of the day should be our largest meal, lunch should be a bit smaller, and the evening meal the smallest of all. Also, a lot of people benefit from having small meals throughout the day rather than three bigger meals.
For a person who goes to bed around 3am and has her last meal at 11pm, I suppose it gives just enough time for the food to be digested if she is active between those times. But, not getting really sleep could also be a sign your digestive system is still active.
